Homemade Strawberry Jam with a Touch of Lemon

Ingredients

  • 2 lbs fresh strawberries, hulled and halved

  • 1 3/4 cups granulated sugar

  • 2 tablespoons lemon juice (freshly squeezed)

  • 1 tablespoon lemon zest

  • 1/2 teaspoon vanilla extract (optional)

Directions

  1. In a large saucepan, combine strawberries, sugar, lemon juice, and lemon zest. Let the mixture sit for 15 minutes to draw out the juices.

  2. Place the pan over medium-high heat and bring to a gentle boil, stirring occasionally to dissolve the sugar.

  3. As the mixture boils, use a potato masher or spoon to crush the strawberries to your desired consistency.

  4. Reduce heat to medium and simmer for 25–30 minutes, stirring frequently, until the jam thickens. You can test it by placing a small spoonful on a cold plate — if it gels slightly and doesn't run, it’s ready.

  5. Remove from heat and stir in the vanilla extract, if using.

  6. Carefully pour the hot jam into sterilised jars, leaving about 1/4 inch of headspace. Seal tightly.

  7. Allow to cool at room temperature, then store in the refrigerator for up to 3 weeks, or process in a water bath for shelf stability.
