Is it the right knife?
The Ichika santoku. Slice, dice and mince.
A 7" blade with a VG10 Japanese steel core and 67 layers of stainless steel, hand-finished to a mirror-polished edge, on an octagonal handle in its own unique colours. The Japanese all-rounder, shorter and flatter than a chef knife.
- 7" all-round blade for meat, fish and veg
- VG10 Japanese steel core, 67 layers
- Octagonal handle, every one coloured differently
Best for
Choose the santoku if you want a lighter, more compact all-rounder. Its flatter edge suits straight up-and-down cuts, and it feels nimble in smaller hands and kitchens.
Is it the right knife?
The Ichika chef knife. One knife for almost everything.
An 8.5" blade with a VG10 Japanese steel core and 67 layers of stainless steel, hand-finished to a mirror-polished edge, on an octagonal handle in its own unique colours. The all-rounder for chopping, slicing and dicing.
- 8.5" blade for meat, fish and veg
- VG10 Japanese steel core, 67 layers
- Octagonal handle, every one coloured differently
Best for
Choose the chef knife if you want one knife for most jobs. The long, curved edge rocks through herbs and onions and slices meat and fish cleanly.
Is it the right knife?
The Ichika nakiri. Built for vegetables.
A 7" blade with a VG10 Japanese steel core and 67 layers of stainless steel, hand-finished to a mirror-polished edge, on an octagonal handle in its own unique colours. A flat, straight edge that meets the board along its whole length.
- 7" flat blade for fast vegetable prep
- VG10 Japanese steel core, 67 layers
- Octagonal handle, every one coloured differently
Best for
Choose the nakiri if you cook a lot of vegetables. The flat edge cuts all the way through in one push, with no half-attached slices, and the tall blade scoops prep off the board.
Is it the right knife?
The Ichika kiritsuke. Long, precise, unmistakable.
An 8.5" blade with a VG10 Japanese steel core and 67 layers of stainless steel, hand-finished to a mirror-polished edge, on an octagonal handle in its own unique colours. A long edge and an angled tip, made for precise slicing.
- 8.5" blade with an angled tip
- VG10 Japanese steel core, 67 layers
- Octagonal handle, every one coloured differently
Best for
Choose the kiritsuke if you slice a lot: fish, meat, finely sliced veg and herbs. The long edge makes clean push cuts, and the angled tip handles detail work.
Is it the right knife?
The Ichika butcher knife. Made for meat.
An 8" blade with a VG10 Japanese steel core and 67 layers of stainless steel, hand-finished to a mirror-polished edge, on an octagonal handle in its own unique colours. Built for trimming, slicing and portioning meat.
- 8" blade for slicing and portioning meat
- VG10 Japanese steel core, 67 layers
- Octagonal handle, every one coloured differently
Best for
Choose the butcher knife if you trim, slice and portion a lot of meat, from steaks to roasts. Not for cutting through bone or frozen food.
